Step 1

Heat the oil in a pan and add the asafoetida powder and cumin seeds, allowing them to sputter. Then, for a minute, add the garlic and green chilies and sauté for another minute.

When they begin to sputter, add the tomatoes and chilli powder, along with a little water to taste.

Step 3

In the pan, combine the jaggery powder, coriander powder, turmeric powder, and salt. Cover with a cover and leave to melt until the jaggery is entirely melted. Stir seldom.

Step 4

After the jaggery has been mixed, add the thick sev and whisk for a few minutes. Allow the mixture to be liquid, like gravy. The sev will absorb the water, but if you want the combination to be more gravy-like, add a little more water.

Step 5

The tomato sev Sabzi is finished. Serve hot with chapati or steaming rice and garnished with coriander leaves.
