Khichdi is to Indians what soup is for people from other countries. It offers all of the answers to health-related issues and has become our favourite comfort meal for all of the right reasons. You may make and consume a bowl of warm khichdi with your favourite ‘aam ka achar’ and fresh salad at any time of day.

Step 1

To begin, wash the dals and immerse them in water for a few minutes. Next, in a bowl, wash the rice 5-6 times in running water and soak it for 30 minutes.

Step 2

Now, heat Rani Refined Oil in a pressure cooker over medium heat. When the Rani Refined Oil is heated enough, sauté the cumin seeds, bay leaf, asafoetida, and cinnamon in it for a few seconds. After that, add the turmeric and ginger paste and cook for another 2-3 minutes. Finally, season with salt and sugar and add the potato, peas, and cauliflower. Cook for 2-3 minutes on medium to high heat, stirring constantly. Once the veggies are cooked, add the soaked rice and dal. Cook for 4-5 minutes after thoroughly combining all of the ingredients.

Step 3

Close the pressure cooker cover and add 3-4 cups of water to the rice. Cook for 3 whistles and then turn off the heat. Allow the steam to escape on its own and serve hot with Rani Refined Oil, papad, achaar, and raita.

1. A well-prepared khichdi is tasty, protein-rich, and healthful. And the best method to cook it at home is simply and with less spices. When creating the dish, try to use just asafoetida, cumin seeds, and turmeric. 2. You may add a little pearl millet to khichdi to make it more healthy. This would also enhance the flavour of the khichdi. 3. You may also add extra vegetables to make the khichdi more flavorful and colourful. 4. You may make khichdi using short-grain rice or brown rice.
