One of the most popular Diwali Snack served as munching snack with evening tea. Cornflakes Chivda made from dried Cornflakes / raw yellow Cornflakes which is deep fried and mixed with other ingredients like Peanuts, Chana Dal, Dry Fruits, and Spices. Cornflakes are very light and crunchy to eat, and with nuts and spices, it makes a great snack for Diwali.
1 cup Dried Raw Cornflakes
½ cup Peanuts
½ cup roasted Chana Dal
2 tbsp. Raisins
8 – 10 Cashews
Some Curry Leaves
1 tbsp. Red Chilli Powder
2 tbsp. Powder Sugar
½ tsp. Turmeric Powder
Salt to Taste
Rani Oil Filtered Groundnut Oil for Deep Fry
Heat Rani Filtered Groundnut Oil in a pan over medium-high flame.
Deep fry dried cornflakes until they puff up and become crispy.
Place fried cornflakes on a paper napkin to remove excess oil.
In the same hot oil, deep fry Peanuts until they turn crispy, place on a paper napkin.
Now, deep fry roasted Chana Dal for 1 – 2 minutes.
Fry Cashews until they turn golden brown.
Fry Raisins until they puff up.
Add fried Cornflakes in a large bowl, also add fried Peanuts, Chana Dal, Cashew and Raisins.
Sprinkle Red Chilli Powder, Salt and Powder Sugar.
Mix well all ingredients.
Heat 2 tbsp. Rani Filtered Groundnut Oil in a Tadka Pan.
Crackle Curry leaves in hot oil.
Add Turmeric Powder, mix well and switch off the gas.
Pour the Tadka over the mixture and mix well.
Cornflakes Chivda is ready to serve.
Store in air-tight container.
